Saignee Rosé
Saignée (French for “bleeding”) is a winemaking method where some pink juice is “bled off” from red grapes early in fermentation to both concentrate the remaining red wine and create a fresh, vibrant rosé as a by-product. This is a blend of Malbec, Mourvedre, and Cabernet Franc. Suggested pairings include duck confit with herbed lentils, Italian grilled vegetables and sausage polenta.
